vegetarian meal plan – september 22, 2013

For the first time in what seems like years, we had a dip in temperature coincide with the beginning of Fall. It was in the 60s today, yo! This means that I am cranking the oven on for bread tonight and have planned a couple of meals that require some active (stove-side) cook times. They’re still pretty quick fixes, but it feels good to be adding some Fall cooking habits into the mix.

Vegetarian Posole
Sausage, Bean & Pasta Soup with Spinach
Marinated Eggplant Wraps
Amaranth Chard & Rice Bowls
Baked Potatoes with Roasted Summer Veggies
Everyday Pad Thai

Snacks
Pineapple-Green Juice
Chocolate, Coconut, and Pecan Granola Bars (these were a total fail last week, but I am trying again with some tweaks)
Zucchini Bread
Honey Chai Roasted Almonds

Weekday breakfasts are feeling a little ho-hum lately. The adrenaline that came with the beginning of the school year has withered into reality and being inventive before caffeine has been difficult… to say the least. I’m gonna hit the library stacks mid-week in hopes of finding some inspiration.
