week’s worth of food

Things are a little different, but other than having more “snack food” on hand for the bottomless pits that the folks in these parts call stomachs and a few more of the girl’s meals (marked by * below), it’ll be regular fare. No fancy special meal for the christmas eve or christmas. We will plan on eating at home instead of roaming the abandoned streets of austin for food (sans reservations), though.

Poached Eggs in Ranchero Sauce on Corn Tortillas!!!

DINNER
Mediterranean Poached Eggs
Broccoli & Cheddar Quiche* | Roasted Cauliflower
Pumpkin Seed Pesto Linguine w/ Roasted Butternut Squash
Split Pea Soup | Mixed Greens Salad*
Black Bean & Squash Empanadas | Fideos

I’ll wing lunches from leftovers since the girl is home all week and there are a couple of items in the fridge that will get squeezed into meals somehow – big batch of chickpeas, quinoa and more cauliflower. I expect to be poaching lots of eggs now that I have my schmancy new kitchen toy!

This food plan is way more loosey-goosey than usual, so I’m hoping it sticks.
