Crossing fingers that my calendar stays as quiet as it stands this Monday morning, because some time in the kitchen is just what my mind and body are craving. I am ready for meditative prep times, slow simmering meals and calming thoughts.

Dinner – Winter Greens Soup* | Roasted Veggies

Tuesday
Girls breakfast out at 24 Diner
Dinner – Mac and Cheese & Brussel Sprouts

Wednesday
Breakfast – Tacos
Dinner - Green Lentils & Spinach with Hard Cooked Eggs & Toast*

Thursday
Breakfast - Overnight Oatmeal
Dinner - Empanadas with Greens and Olives* | Black Beans

Friday (Valentine’s Day)
Family Breakfast Out
Dinner - Tlacoyas with Refried Black Beans & Red Cabbage Slaw

Saturday
Dinner – Pizza Night

Snacks, Beverages and Other Things
Do Chua (Vietnamese Carrot and Daikon)***
Turnip Chips^

Vegetable Broth

    • sometimes, i wish my house worked more like my aunt’s on the weekends. she makes a big pot of food saturday morning and everyone trickles in over the course of the day to eat and linger and visit. it’s this wonderful flood of folks all day. someday i’ll be like her…

      • you’re really sweet. thank you. working from home a few days a week def works in my favor and yes… cooking for one makes it exponentially harder to motivate. simple things that can be dressed in different ways and/or frozen for later can be lifesavers.
