I like to have 4-5 meals thought through for the week. This usually leaves me plenty of wiggle room for last-minute inspiration and my weekend cooking which is a little less rushed and (I like to think) from the heart. It’s been two weeks since my last meal plan ’cause I went a little crazy last time with a whopping 8 meals in the queue, 4 of which needed spinach. Ay ay ay. I made it through that list just yesterday.
This week’s is a little less ambitious.
